apple and snickers salad

Hi friend!

The first good apples showed up at the store this week and I got a little too excited about it!

It's still too warm here to turn the oven on. So this is what I make instead — five minutes, one bowl, and it kind of tastes like dessert.

Recipe first!

make this today

apple and snickers salad

Chopped apple, thick Greek yogurt, dates, peanut butter, a scatter of chocolate chips. It's the potluck salad you remember, except it actually keeps you full!

picking apples in early september

the early ones are the crisp ones. Gala, Honeycrisp and Ginger Gold tend to show up first, and they're all firm enough to hold their shape once they're chopped and dressed.

skip the soft ones for this. Save McIntosh and anything that dents under your thumb for applesauce! In a cold salad they kind of turn to mush.

a squeeze of lemon keeps them bright. Not for flavor so much as for looks — it slows down the browning if you're prepping ahead.

leave the skin on! That's where most of the fiber lives, and it gives you something to bite into.

⭐⭐⭐⭐⭐

“Literally just finished this and I may or may not have licked the bowl. It was so good I didn't want it to end!”
